- Sort the beans and remove any unwanted material.
- Rinse thoroughly under clean running water.
- Soak in two to three times their volume of water for at least 5 hours, preferably overnight.
- Discard the soaking water and rinse the beans again.
- Add fresh water and bring the beans to a vigorous boil.
- Boil vigorously for at least 10 minutes.
- Continue cooking until completely soft and tender.
- Add vegetables, herbs, salt and spices according to the selected recipe.
Never eat raw, soaked-only or undercooked kidney beans.
